Pepperman’s High-Powered Papaya Pudding

This incredibly quick, super-easy recipe uses the pre-made Cosmic-Cashew Yogurt to yield an unbelievably silky-smooth pudding, which can be used as a pie filling. This is an integral component of layered custard desserts, frozen “sorbets,” or smoothies.

Large papaya

4 to 6 lbs. (3 cups after scooping) |
| Dried apricots(soaked overnight & drained) |

Cosmic Cashew Yogurt
|
1 cup |
| Chocolate mint leaves (diced) |
2 tablespoons |
| Coconut oil (cold-pressed) |
2 tablespoons |
The idea here is to blend all ingredients thoroughly and completely, while preserving the delicate texture of the papaya. Using the yogurt puts us a step ahead, by having the ingredients within it already blended. Be attentive — use the blender’s speed control knob and blend just enough to achieve smoothness, and that’s it! Combine all ingredients except coconut oil, scrape sides with spatula and make sure the mint is blended. Next blend in coconut oil on low-medium speed. Serve in papaya shell. Decorate with berries, orange slices, chocolate mint, and spearmint. Impeccable! Serves: 4.
