Interplanetary Okra Salad & Astral Beauty Dressing

This stunning green salad earned its name by causing first-time eaters to be transported to “other worlds,” where limitations on shockingly high taste and enzyme extremes simply don’t exist. Flavors intensify over time, yet salad may become soggy if saved for longer than one day. It has never lasted longer than one hour at our raw-food headquarters!

Salad

Okra (sliced thin on bias)
   7 pod-fruits
Romaine (core end pieces)
 1-2 cups
Arugula (chopped) 
  1/2 cup
Celery hearts (bias cut, Chinese style)
 1 cup
Jerusalem artichoke (finely diced)   1/2 cup
Cucumber (pickling)   1 medium
Red bell pepper (finely diced)     1 whole
Yellow bell pepper (julienned)
 1 whole
Ripe Tomato, romas (seeded, julienned) 
 4 small
Broccoli (finely diced)      1 cup
        
Combine all and toss. Okra is a beautifying food in its own right!


Astral Beauty Dressing


Stone-crushed olive oil 
   1 cup
Flaxseed oil    1/2 cup
Spring water
 1/2 cup
Lemon juice   
 1/2 cup
Celtic Grey Mineral Sea Salt 
 1 tablespoon
Ginger (finely diced) 
 1 teaspoon
Garlic (with skin)
   2 medium cloves
Okra (chopped) 
 2 pod-fruits
Hemp seeds    1/3 cup
Red hot chili pepper (diced) 
 1 whole
Coconut meat (soft)     1 whole
       
                
Blend all except coconut meat. Scrape sides, add coconut meat, blend till smooth, should be creamy, yet slightly thin. Toss with salad.

Garnish with long, thin okra slices, Italian parsley, celery leaf, and julienned tomato slices! Serves: 4.
