- 1 cup Stone-crushed olive oil
- ½ cup Lemon juice or raw apple cider vinegar
- 1 Tablespoon of honey, or 2 dates, or dried figs
Blend up a combination of these three types of ingredients. Use this recipe as a basis for building more complex dressings. The olive oil aids digestion. The acids in the lemon juice or vinegar help to break down vegetable fibers. The dried fruit or honey adds sweetness to the mix. You may notice that these three types of ingredients (an oil, an acid, and a sweetener) are typically used in cooked, commercial salad dressings.
