Dear David: How much does storing coconut butter in clear glass affect it? I’ve heard you speak against it in the past but now NFL appears to be selling a butter in clear glass. Do you have any comments about that?
Dave: Yeah, we don’t sell coconut butter in clear glass, that’s one thing I won’t allow. I won’t allow any oil to be sold here that’s in clear glass because it does photo-oxidize, every oil does. Coconut oil is much more stable than any other oil in that regard but it still is effected by light. In terms of like, okay for example, lets say you put flax oil out in the sun in a clear container for a half hour. It would, so in a half hour it would degrade as much as coconut oil would degrade in a week.
LF: Wow.
DW: That’s how much more stable coconut oil is but it still will degrade. So I really feel like with any oil, it’s got to be in a dark amber glass container or cobalt blue is a type we’re using right now for one of our coconut oils, that maybe what that person saw was the cobalt blue.
