Goji Berry Souffle

This is slightly adapted from a recipe in Everyday Raw (one of my new favorite raw recipe books!)

1 cup goji berries soaked 15min, drain

1.5 cups cashews soaked 1-2 hours

1/4 cup agave (or omit agave-for less sweet)

1/4 cup coconut oil

1 cup water (include goji soak water)

3 dates
-
2tsp lemon juice
-
seeds of one vanilla bean
-
pinch sea salt
Blend until smooth in Vitamix. Pour into individual cups and freeze 4-5 hours.
